How can you check the traceability of caviar?
In the caviar world there are many different varieties and often the labelling can look confusing.
Every tin of caviar comes with a CITES code on the back which has a series of letters and numbers indicating it's origin. This label is subject to regulations and is called the CITES strip. CITES is a legal requirement for all caviar products (and other products.
To understand CITES, the most important information is set out as follows SPECIES/FARMED OR WILD/PRODUCTION YEAR/HEALTH APPROVAL NUMBER/PURCHASE ORDER NUMBER
The first three letters give you the species, for example BAE is Acipenser Baerii, GUE is Acipenser Gueldenstaedii (Oscietra) and HUS is Huso Huso (Beluga).
The detail on the CITES strip shows how you can easily find the geographical origin and production year of caviar you purchase.
